When I was at Michael Smith Inc, Michael would occasionally have lunch brought in for the office and when his chef did the menu it was sure to be amazing. A salad that he made had the entire office buzzing and it has since become my go-to bring-along dish. The dish that is easy to make, no cooking involved (just chopping) and can be made ahead of time and adapted for however many people you need. Plus people think you are a culinary genius because this dish is greater than the sum of its parts. Everyone needs a recipe like this in their arsenal.
{KALE SALAD}
1 bunch of tuscan kale, cleaned, stalk removed and chopped (about 4 cups)
1/2 cup chopped red bell pepper
1/2 cup chopped celery
1/2 cup chopped black olives
1/2 cup chopped green onions
1/2 cup crumbled feta
1/2 cup chopped walnuts
1/2 cup dried cranberries
Toss above ingredients
{VINAIGRETTE}
1/4 cup good olive oil
1/4 cup of vinegar
teaspoon of dijon mustard
Whisk above ingredients and pour over salad to taste.
When I first got this recipe, it was a list of ingredients, so if you want more or less of something try it!
